Steak and beets

So, this week, I've consumed a bit more wheat than I have in a while, with little to no reaction, so I don't think wheat is my issue.  YAY!  BUT- I have been doing quite well without it, so I shan't bring it back into the full diet, but I won't shy away from it, either.

So tonight.  Tonight!  Steak and beets!  a Red Feast if ever there was one!

But because I like my steak bloody rare, I cook it at 225 for about 20 minutes. Then sear for 2 minutes each side.  Comes out perfect every time.

My beets I bake in the oven, with the skin still on, for about 40 minutes in 375 oven.  I then let them cool down with aluminum  foil covering it for about 20 minutes, cut 'em up and add some vinegar and salt. Soooo good.

It snowed sooo much yesterday.  When will spring come?

A weekend post.

Saturday was a wash.  I didnt' eat breakfast, didn't get lunch, and by the time I left work, I was *starving*.   I stopped at Wendy's and got a burger, small diet soda and a jr. Frosty.  I know there is 1 possible trigger, and 2 definite triggers  in that meal-wheat, diet soda, and dairy.  I ate the burger, drank a little of the soda, and ate the frosty (which was tiny, it really was.)  I did not have a reaction.  Okay!
Dinner was pork loin and collard greens with bacon.  Pork was good, collard greens were...well, this was the first time I've ever made them.  And I found them to be bitter.  Not a fan of bitter.
Dessert was fruit salad with a bit of greek yogurt.  My fruit salads are usually strawberries, blueberries, and canned pineapple (in juice, not syrup). Last night I added mango. Because mango is on sale, and mango is my most favorite fruit.  I then had an almost immediate reaction, after eating the fruit.
Now, it could be a couple things, really.  I ate wheat, dairy, diet soda, and then more dairy on top of the mango, which is my favorite fruit, but also a food I suspected (and feared) were a trigger food.  Maybe it was a culmination.  But the immediacy of the reaction leads me to believe whatever the issue was is in the fruit salad.

So, I tried it again, the leftover fruit salad, tonight, without the greek yogurt.  And without the day of abandon.  No immediate reaction, but fairly quick discomfort.
So, mango is now most likely a trigger.  I might be able to eat a small amount, but I definitely can not have it with another trigger-i.e. yogurt.
I'm also noticing that dairy is so hit or miss.  But when it hits..it hits hard.  Perhaps I really can't do the yogurt, but I'm going to try it a few more ways before I make that decision.  The yogurt is my substitution for sour cream, my favorite dairy.  I need some creaminess in my life!

This is such a trial and error journey for me.  I hate giving up foods I like, but at the same time, I don't like feeling terrible all the time.

But on the plus side, I'm learning that I can eat some trigger foods, as long as I don't go overboard.  I just have to find that line, I guess.
